University House is proud to announce its next Meet the Chef Dinner featuring James Viles, Chef and owner of two-hatted Biota Dining in Bowral, NSW, in conversation with Natasha Rudra, Life & Entertainment Editor of the Canberra Times.
The event includes a canape, and a two-course meal inspired by James’ cookbook, Biota: Grow. Gather. Cook. Our Executive Chef, Anshul Chandna, and his outstanding team will work together with James to prepare the meal. The price of the meal includes a complimentary glass of Clonakilla wine, as well as tea or coffee.
James Viles has become one of Australia’s most respected young chefs and restaurateurs, recognised for his commitment to sustainability and his dramatic modern food. He champions the use of seasonal, ethical produce to create honest, pure and delicious dishes. At the age of 23, James was the youngest chef ever to be awarded the Chef’s Hat by the Sydney Morning Herald.
